Job Duties:

  • Train staff to anticipate and respond to guest needs
  • Actively build open communication with staff to ensure feedback regarding guest satisfaction
  • Implement the departmental training plans with all new recruits and monitor their performance
  • Work with other departments to deal promptly and effectively with all administrative duties’
  • Ensure a high standard of grooming, personal appearance and hygiene at all times
  • Ensure that all members of the team are fully aware of the Liquor Licensing Laws and possess Serving It Right licenses
  • Co-ordinate and communicate with the Executive Chef on a daily basis to ensure cost effectiveness and high quality food
  • Schedule staff in accordance with labour standards, occupancy levels and group events
  • Maintain strict control and par for all foods and beverages
  • Meet and collaborate with General Manager on a daily basis
  • Conduct informative weekly departmental meetings
  • Build and maintain guest rapport throughout length of stay at Resort
  • Effectively handle guest feedback
  • Project a positive, professional and friendly image to the guests and employees
  • Monitor restaurant and catering operations by actively participating in the service (observe guests, server performance, popularity of menu items etc)
  • Inspect restaurant daily to ensure cleanliness, physical condition and functioning equipment
  • Co-ordinate resources for special events
  • Ensure service personal understands method of preparation and presentation of all food and beverages served
  • Ensure a smooth flow of orders throughout service- emphasizing timely deliveries, prioritising of orders and keeping guests informed of delays
  • Ensure that all guests are looked after in the most professional and courteous manner
  • Ensure beverage and supply stocks are managed according to par principals and rotation
  • Maintaining and raising service levels
  • Developing client relationships and loyalty
  • Maintain compliance with Government regulations to ensure a sanitary work environment
  • Ensure that all food and beverage items are correct in Silverware (POS)
  • Maintain strict control and par for all goods and beverages
  • Compile revenue forecasts on a weekly basis


  • Previous F&B management experience within a premium Resort, Hotel or free-standing establishment
  • Proven leadership skills
  • Experienced in implementing departmental changes and obtaining optimal results
  • Experience in PNL, budgeting, and pricing
  • Proven ability to control payroll and cost lines
  • Knowledge Silverware / Maestro (POS/PMS)
  • Ability to work flexible hours/days
  • Great attention to detail
  • Reliable transportation
